Turmeric Chicken Curry Recipe

Ingredients:

  • 1 lb 450g boneless, skinless chicken breasts or thigh meats cut into biteable pieces.

  • 2 tablespoons vegetable oil

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 1-inch piece of ginger, grated

  • 2 teaspoons ground turmeric

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon chili powder (adjust to taste)

  • 1 can (14 oz) diced tomatoes

  • 1 can (14 oz) coconut milk

  • Salt to taste

  • Fresh cilantro leaves for garnish

Instructions:

Prepare the Chicken:

    • Cut the chicken into bite-sized pieces and set aside for further use.

Sauté Onions, Garlic, and Ginger:

    • Heat the vegetable oil, over medium heat, in a large frying pan or pot.

    • Add the chopped onions and sauté until they turn translucent, about 5-7 minutes.

    • Add the minced garlic and grated ginger, and cook for another 2 minutes until fragrant.

Add Spices:

    • Sprinkle the ground turmeric, ground cumin, coriander,d cinnamon, and chili powder over the onion mixture.

    • Stir well to coat the onions and spices evenly, and let them cook for 1-2 minutes.

Cook the Chicken:

    • Add the chicken pieces to the skillet or pot, stirring to coat them with the spice mixture.

    • Cook until the chicken is lightly browned on all sides, about 5-7 minutes.

Simmer with Tomatoes and Coconut Milk:

    • Pour in the diced tomatoes with their juices and the coconut milk.

    • Stir to combine all the ingredients, then bring the mixture to a gentle simmer.

Simmer and Season:

    • Let the curry simmer uncovered for about 20-25 minutes, or until the chicken is cooked and the sauce thickens slightly.

    • Taste and season with salt as needed.

Garnish and Serve:

    • Once the chicken is cooked and the sauce has thickened to your desired consistency, remove the curry from the heat.

    • Garnish with fresh cilantro leaves before serving.

    • Serve the turmeric chicken curry hot with steamed rice, naan bread, or your favorite side dish.
