Mediterranean Chickpea Salad Recipe


  • 2 cans of 15 ounces each of chickpeas rinsed and drained.

  • 1 cucumber, diced

  • 1 red bell pepper, diced

  • 1/2 red onion, finely chopped

  • 1 cup cherry tomatoes, halved

  • 1/2 cup Kalamata olives, pitted and halved

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup fresh mint leaves, chopped

  • 1/3 cup crumbled feta cheese (optional)

For the Dressing:

  • 1/4 cup extra virgin olive oil

  • 2 tablespoons red wine vinegar

  • 1 clove garlic, minced

  • 1 teaspoon dried oregano

  • Salt and pepper to taste


Prepare the Chickpeas: In a large mixing bowl, combine the rinsed and drained chickpeas.

Add Vegetables: Add the diced cucumber, red bell pepper, red onion, cherry tomatoes, and Kalamata olives to the bowl with the chickpeas.

Add Herbs: Sprinkle the chopped parsley and mint leaves over the vegetables and chickpeas.

Optional Feta Cheese: If using feta cheese, crumble it over the salad ingredients.

Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper until well combined.

Dress the Salad: Pour the dressing over the salad ingredients in the large mixing bowl.

Toss Gently: Gently toss all the ingredients together until the salad is evenly coated with the dressing.

Chill and Serve: Cover the salad bowl with plastic wrap or transfer the salad to a sealed container. To allow the flavors to blend, refrigerate for at least 30 minutes.

Serve: Once chilled, serve the Mediterranean chickpea salad as a refreshing side dish or a light main course. Enjoy!
