Chickpea and Spinach Curry Recipe

Chickpea and Spinach Curry

Ingredients:

  • 2 cups cooked chickpeas (canned or cooked from dried)

  • 2 cups fresh spinach leaves, chopped

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 1-inch piece of ginger, minced

  • 2 tomatoes, finely chopped

  • 1 teaspoon cumin seeds

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon garam masala

  • 1/4 teaspoon cayenne pepper (adjust to taste)

  • Salt to taste

  • 2 tablespoons cooking oil

  • Fresh cilantro leaves for garnish

  • Lemon wedges for serving

Instructions:

  • Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter over medium heat.

  • Add chopped onions and sauté until golden brown, about 5-6 minutes over medium heat.

  • Add minced garlic and ginger. Sauté for another 2 minutes until fragrant merged into the cooking material.

  • Add chopped tomatoes to the pan and cook until they soften and turn into a paste-like consistency, about 5-7 minutes.

  • Stir in ground coriander, ground cumin, turmeric powder, garam masala, cayenne pepper, and salt. Cook the spices with the tomato mixture for 2-3 minutes to allow the flavors to meld together.

  • Add the cooked chickpeas to the pan and mix well with the spice mixture. Allow the chickpeas to cook with the spices for 5-7 minutes, stirring occasionally.

  • Add chopped spinach leaves to the pan and mix until they wilt and combine with the chickpeas and spices. Cook for an additional 3-4 minutes until the spinach is tender.

  • If the mixture looks dry, you can add a splash of water to achieve your desired consistency the remove the pan from heat once.

  • Once everything is well combined and the spinach is heated.

  • Garnish the chickpea and spinach curry with fresh cilantro leaves to look better.

  • Serve hot with steamed rice, naan bread, or chapati. Squeeze a wedge of lemon over the curry before serving for an extra burst of flavor.
